Watermelon Salad Recipe by Vallie
2 Table Spoons of Olive Oil
(We used Beach House winery MEYER LEMON OIL)
1 Tablespoon Finely Chopped Mint
1 Tablespoons of White Balsamic Vinegar
(We Used Beach House Winery FIG WHITE BALSAMIC VINEGAR)
1 Tablespoon of fresh squeezed lemon juice
1/4 Teaspoon of Sea Salt
Pinch of Pepper
I put all of the ingredients in a small mason jar, then put the lid on and shake it until mixed well or emulsified no mason jar no worries just whisk together in a bowl..
Set aside and assemble the salad.
3 cups of bite sized chunks of watermelon
1/4 cup thinly sliced red onion
1/3 cup crumbled Feta
(For my Vegans we added Violife VEGAN FETA)
Toss lightly, then add dressing and toss again - but be gentle as to not mash the watermelon up too much. Now enjoy this light and tasty salad! If you want to jazz it up here are some ideas that are simply delicious.

Serve over bed of arugula to make this a complete salad
- Add cubes of cucumber
- Add sliced mint
- Add toasted pine nuts for crunch
- Add Grilled chicken, fish or tofu
